Exploring Culinary Arts 1

This course is designed for students interested in a career in professional food services. Topics of study include careers in the food service industry, use and care of commercial equipment and tools, techniques of quantity cooking, meal planning, and kitchen sanitation and safety. Students run a take-out restaurant. This course is open to students in grades 10-12. Exploring Culinary Arts can be taken concurrently with Bakeshop. Prerequisite: “C” or better in Introduction to Culinary Arts, or permission of instructor.  (10-12) .5 Unit, 5 Periods (l/2 year)

 

Exploring Culinary Arts 2

This course is designed for students interested in a career in professional food services. The course strengthens and expands the culinary art skills learned in Culinary Arts I. Topics of study include menu planning, restaurant management, kitchen organization, dining room management and careers in the food service industry. The students run a sit down restaurant as part of the program. Eligible students can receive college-credit for this course as part of The Connecticut Career Clusters, their pathways, and 21st Century skills are integrated in all course offerings. Some examples of careers that can be followed with a major in Family and Consumer Sciences are: Education and Training – careers in planning, managing and providing education and training services, and related learning support services. (Education, Social Services, Human Services, Health Occupations, Family Studies, etc.) Hospitality and Tourism – careers in management, marketing and operations of restaurants and other food services, lodging, attractions, recreation events and travel related services. (Chef, Baker, Banquet Services, Business Owner, Food Services Manager, Cookbook Author, Nutritionist, Dietician, Caterer, etc.) Future careers will continue to evolve in the 21st Century 32 our articulation agreement with Lincoln Technical Institute. Students must have maintained a “C” (2.0 GPA) or higher and must have maintained high attendance. This course is open to students in grades 10-12. Exploring Culinary Arts can be taken concurrently with Bakeshop. Prerequisite: “C” or better in Culinary Foods 1.  (10-12) .5 Unit, 5 Periods (l/2 year)
